8. Dr Fern’s Gin Parlour

This hidden spot is a favourite amongst discerning drinkers, particularly those whose poison of choice is gin. Gape at the more than 250 different varieties of gin lined up on the shelves behind the bar, as you decide which one should go with which tonic and what to garnish it with. Soak in the quirky interior and let the doctors behind the bar recommend the best remedy for whatever ails you – you’re guaranteed a great night out at this bar. Tip: Look for the Louis Vuitton at The Landmark and you’ll stumble across the tiny door to this parlour. It might take you a few minutes to figure out how to open the door, but that’s all part of the fun.

7. The Chinnery

For a formal evening at a fine establishment, head to The Chinnery dressed in your smartest ‘long trousers and elegant attire’ (well, it is located inside the Mandarin Oriental). The extra effort will be worth it, though, for the great British food, washed down with premium single malt whiskeys and draft beer served from custom-made silver tankards. 6. 8 1/2 Otto e Mezzo Bombana

As a part of the only Italian restaurant outside of Italy to have 3 Michelin stars, word has it that the cocktails here are equally as fantastic as the meals. The drinks list created by mixologist-extraordinaire Giancarlo Mancino is said to be 42 pages long, containing cocktail history and recipes. Classics are served with a twist, along with premium wines and of course, all your old-fashioned favourites.

5. Zuma

Serving over 40 different varieties of sake, an extensive selection of whiskeys (including rare ones) from the different regions in Japan and great cocktails like the Japanese whiskey sour and the Umami martini, you have more than enough reasons to give this izakaya-style bar and lounge a visit. It’s one of the best bars in Hong Kong, so dress smartly to enter.

They really crank up the party here at The Pontiac. This is where you should head to for a ‘Coyote Ugly’ kind of experience – the loud rock music, the countertop dancing, even undergarments hanging from the ceiling. 3. Lobster Bar and Grill

Listen to the live jazz band performing while you sip on your classic Bellini, Negroni, Marlows Gimlet or the Hoffman House Martini (or any of your usual spirits, gins or bourbons). It’s all about class here at this establishment, located on the sixth level of the Island Shangri-La Hotel. This spot has earned a reputation as a must-visit for the best international bartenders visiting the island, so you’d be wise to take their lead.

2. Stockton

This bar, looking like the sort of place where the Victorian-era Sherlock Holmes would enjoy a drink, doesn’t lack for attitude. The cocktails here don’t hold back. One favourite, the ‘Bitter Bitch’ is apparently an homage to Queen Elizabeth I consisting of limoncello, Aperol, Angostura bitters, orange and citrus juice. Their house rules are also likely to grab your attention: ‘This establishment is a celebration of the mighty tipple, any requests for Jagerbombs or such lark will be met with disdain and possible requests for immediate departure’. To get to this hidden bar, the owners say you should go ‘down a dark alleyway’ and ‘look for the light bulb’. Allow us to give you another hint: you need to walk up a flight of stairs. Good luck…

1. Quinary

No. 1 in Hong Kong, and No. 7 in all of Asia, Quinary is all about engaging the five senses. Their signature drinks include the Quinary Sour, with Johnnie Walker Black Label whisky infused with tonka beans, Belsazar Red vermouth, homemade umami liquorice syrup, lemon juice, egg white and dashi powder; their Marshmallow Duo and Earl Grey Caviar Martini. The bar boasts a rotary evaporator and equipment for redistilling and slow-cooking flavoured spirits, not forgetting a caviar box for the signature Earl Grey Caviar Martini.
